Recipe: Bug slider

As part of Bug Lab, we're serving up delicious bug sliders, with locusts and ants, in the cafe. Here's how to make your own at home.

Bug slider and hot chips


Bug slider, 2017. Te Papa

What you'll need:

  • 4 Brezel sliders
  • 1 small tomato
  • Iceberg lettuce
  • Lemongrass ant aioli
  • 4 bug patties
  • 12 locusts

Bug patties

  • 140gm Chicken meat
  • 12 large locusts (approx. 20gm)
  • 5gm garlic
  • Salt and pepper

Mince all ingredients together and mix well. Form four small patties approx. 40gm each. Sear and cook in a hot pan.

Lemongrass ant aioli

  • 3tbsp garlic aioli
  • 1gm lemongrass ants

Mix together.

To prepare the locusts:

Remove legs and wings from eight locusts.

Mix a little corn flour with salt, pepper, and onion powder and toss the locusts in the mix.

Shake all excess flour off and shallow fry the locusts until crispy.

To assemble the slider:

Cut the Brezel slider in half. Put some washed iceberg lettuce onto the slider and top with a slice of tomato.

Place the patty on top and drizzle some aioli over it.

Top with two locusts (the ones you removed the legs and wings from) and put the top part of the slider on.

Put a toothpick through the remaining locust and secure it on the slider.

Serve with the remainder of the aioli.
