From 1 to 30 November, our award-winning Te Papa Cafe team brings kai Māori to life at Te Papa Café on Level One.
Following our win at Burger Wellington, Head Chef Hitesh Bhoir has created a menu that celebrates kōanga and maramataka, reflecting Maori concepts of time and the natural rhythms of Aotearoa New Zealand’s food landscape, using only seasonal ingredients.
Enjoy hearty dishes such as a pork boil up and pulled-pork roulade, and finish with native-inspired desserts like kawakawa orange parfait or smoked kūmara brûlée.
Pork boil up – $28
Slow-simmered pork bone broth with pūhā, served with tender silver beet, pumpkin, kūmara, and carrot, accompanied by golden grilled rewena bread.
Kawakawa orange parfait – $9
Creamy orange parfait infused with native kawakawa, served on buttery shortbread.
Pulled pork roulade – $28
Succulent pulled pork roulade with silky parsnip puree, layered kūmara gratin, and lightly charred broccoli, finished with a rich port wine jus.
Smoked kūmara brûlée – $9
Velvety kūmara custard gently smoked to highlight natural sweetness, topped with crisp caramelised sugar.

The maramataka is a planting and fishing monthly almanac. For most iwi, the lunar months begin with the new moon (Whiro), but for others it begins with the full moon (Rākaunui). The start of each month is aligned to the morning rising of particular stars.
